Nigerian Jollof Rice Recipe

Jollof rice is a delicious, rich and flavourful dish that is popular in many west african countries. It is a spicy dish that is made with tomatoes, onions, peppers and intensely flavourful stock. Nigerian party is incomplete without the signature smoky party Jollof. Unlike the Ghanian or Senegalese Jellof versions, which is made using jasmine or basmati rice, Nigerian jollof is basically made using long grain parboiled rice becuse it holds up better during the stewing process and absorbs the rich tomato stew flavour without turning into a mush.
