Nigerian Jollof Rice Recipe
Jollof rice is a delicious,rich and flavourful dish that is
popular in many west african countries. It is a spicy dish that is made with
tomatoes,onions,peppers and intensely flavourful stock. Nigerian party is
incomplete without the signature smoky party Jollof.
Unlike the Ghanian or Senegalese Jellof versions, which
is made using jasmine or basmati rice, Nigerian jollof is basically made using long
grain parboiled rice becuse it holds up better during the stewing process and absorbs the rich
tomato stew flavour without turning into a mush.

Prep Time: 25-30 minutes
Cook Time:45-50 miutes
Servings: Typically served with protein like chicken, beef,
or fish and popular sides like fried plaintains aka Dodo, Coleslaw or moi-moi
Difficulty:Low/medium
INGREDIENTS (Adjusted for 5 people)
- Seven (7) cups of rice
- Ten (10)pieces of fresh tomatoes/tomatoe paste
- Chicken or any protein of choice
- Red or yellow bell pepper
- 1 cup of vegetable oil oil
- Spices and salt to taste
- 3 medium Onions
- Creyfish (optional)
INSTRUCTIONS
- Wash the rice thoroughly and set aside
- Wash the meat, add spices, seasoning cubes and set
aside to marinate
- Parboil the meat
- Heat oil and fry your meat after which you fry the tomatoes
- When the tomatoes is well dried pour in your meat stock
- pour in your rice and stir well to mix,
adjust with water and spices to yur taste
ADDITIONAL TIPS
- Fry the tomatoe and pepper blend until the oil separates and rises to the top
- Cover the pot with aluminium foil before putting the lid on to trap steam
- Allow the rice to cook on low heat to ensure it absorbs all the flavors.
- IF you want that,traditional party smoky flavour,let the rice
burn a little bit at the bottom
- Use more red bell peppers aka shombo/tatashe and less raw tomaotes to achieve to achieve
a vibrant red colour and richer flavour
